This is the one coated pan on the shelf and everything else here is bare metal on purpose, because a coating is a part with an expiry date fitted to a tool that should not have one. A thin dosa and a crepe are the honest exception: bare steel and cast iron can both do it, but a coated pan does it every morning with no learning curve. So here is one, made properly and described without the usual fog. The coating is PTFE, polytetrafluoroethylene, roller-applied in three layers, primer, midcoat and topcoat, over a 4.2 mm cast aluminium body and cured at about 410 C. Now the part the category will not say out loud. PTFE is a fluoropolymer, and a fluoropolymer is a PFAS under the OECD definition, so a PTFE pan cannot be PFAS-free and any pan sold to you as both PTFE and PFAS-free is misdescribed. What is true is narrower and we will only claim the narrow thing: PFOA was a processing aid, it was phased out of fluoropolymer manufacture by around 2015, and this coating is tested free of PFOA and PFOS. PFOA-free is not PFAS-free. Sliding one word in place of the other is precisely the substitution this shop exists to refuse. The temperature matters just as much. PTFE is stable in service to 260 C and begins to break down above it, and an empty pan on a full flame passes 260 C in about two minutes, which is why every non-stick failure story starts with a preheat.

- When batter starts to grip after oiling, or the coating is cut through, it is finished. Replace it, do not keep cooking on a broken film
- Wooden or silicone tools only, no dishwasher, no scrubber, and do not stack another pan inside it without a cloth
- Gas and hotplate only. It is aluminium, so it will not work on induction, and it does not go in an oven
