Details
Traditional tall basmati from the Doon valley foothills, the old low-yield variety rather than a modern hybrid bred for tonnage. After harvest it is rested for twenty four months in jute sacks in a ventilated godown, which is the only real way to age rice. The grain loses moisture slowly, firms up, and then elongates instead of breaking.
